I made this recipe up on the fly, but it is quite incredible if I say so myself. I served it as a dip with shrimp and vegetables. It can also be served with brown rice, some kind of meat and vegetables.
1 8 oz jar of smooth peanut butter
1 can of coconut milk (can use lite if prefer)
1 serrano chili (chopped fine)
1/2 head of garlic (chopped fine)
3-4 tablespoons of fresh ginger
2 tablespoons of hotsauce
1/2 cup of soy sauce
1/3 cup of lime juice
1 bunch of cilantro (chopped fine)
Grate the ginger, including the skin. When it is fully grated gather it all in your hand and squeeze all the juice from the ginger into a bowl. Combine all the other ingredients and whisk together. If serving this sauce hot heat it slowly in a pan.
