Mediterranean Shrimp Salad


4 tomatoes
1/2 English Cucumber
1 Bell Pepper
1/2 Kalamata Olives
Head of Basil or Head of Mint – depending on mood.Head of broad leaved parsley
2 Avocados
1 cup pre-cooked brown rice or quinoa

1/4 cup lemon juice
2 tablespoon olive oil
Salt n Pepper

1 pound of shrimp

Chop all the vegetables. Whisk the lemon juice and olive oil with salt and pepper. Boil the shrimp for a couple of minutes in salted water. Combine everything.
