Beef Stroganoff

Ok, this is one of those rewritten recipes. Have a large healthy salad before eating this, and practice portion control. To lower the calorie count I use a lean meat, lean sour cream and no-fat broth.


1 London Broil Steak – Approximately 2 pounds
4 large onions
2 pounds of brown mushrooms
1 tablespoon olive oil
1.5 cup low fat or no fat sour cream
4 cups no-fat beef broth
Optional: Paprika and Chili powder
Serve with brown rice.

Chop the onions and wash and chop the mushrooms. Finely slice the beef.
Add some water to the pot and add the mushrooms and onions with salt and pepper. Continue to cook the mushrooms and onions until all the water has evaporated from the pan and the onions are translucent. Add olive oil and brown the meat. Add paprika and chili if using. Add broth and simmer for about 3 hours or until your meat is fork tender. Turn the heat way down so you take the dish just off the boiling point. Put the sour cream in a bowl and add some broth and whisk it together with the sour cream to temper the sour cream. Add a little more broth and whisk it together. Then add the sour cream mixture to the meat dish and warm through.
